
As I trudged through the fresh snow this morning I was happy that I packed a warm and cozy lunch.  The hot and hearty details below:
- homemade chili (kidney beans, veggies, shredded chicken)
- thawed frozen pineapples
- vegan pumpkin apple muffin
- bell pepper strips
- balsamic vinaigrette dipper
Sometimes there's nothing better than a hot meal on a blustery, snowy day.  Actually, the highlight of this lunch was the crunchy bell peppers dipped in tangy salad dressing.  I also threw in an apple for a mid-morning snack but I didn't put it in the picture.  Anyway, I'll try to switch it up tomorrow, but I can't make any promises.  I'm a creature of habit.
