Simple Tuesday

Today's lunch was kind of basic and a little restrictive. The barely there details below:
  • butternut squash and lentil soup
  • clementine
  • apple
I don't know why I didn't learn my lesson with the lasagna, but now I'm really in the soup this week. I think it's going to be soup and a sandwich tomorrow. Why did I make make a bottomless pot of this stuff?

Anyway, I'm also feeling totally uninspired and lost when it comes to my "side" dishes. Don't get me wrong, I love apples, clementines, and pita chips, but I've got to come up with something else. It might not happen this week because there's not much in the house this week and I only go food shopping on Sunday. BUT, this Saturday we get our first share of the winter CSA so I'm super excited to see what's in the box. Please, God, let there be carrots and lettuce! The lettuce in a bag that I bought from the grocery store this weekend was so sucky compared to what I was we got from the CSA.

Yikes, this post sort of became a bit ranty. Sorry folks, it's been a long day. I promise to be more cheery tomorrow. Maybe.

  1. I would freeze whatever you have left of this tub o' soup in individual portions ASAP! If you put it in lil ziploc baggies, seal, and stack 'em up on top of each other they store REALLY well. And the soup baggie can double as an ice pack for the rest of your lunch when you DO pack it. By lunch time it'll have thawed enough to transfer into your lil bento compartment pretty easily and you can microwave and enjoy from there. Magic!

    As for side dishes...how 'bout a simple grain salad, like a quinoa, bulgur, or a cous cous? All would go great with a black bean/corn/mexican theme...

    Or, you seem like a finger food gal - here's my personal new favorite thing... you know those small "low carb" tortillas at Trader Joe's? Suuuuuper low cal and high fiber. Anyway, I've been taking one of those, smearing it w/peanut butter (for you maybe a smear of pumpkin or apple butter instead...) and rolling up a small banana in it - it's like a sweet little banana burrito. Then I slice it into little bite size pieces..Ta da! SUPER filling, sweet side dish or dessert. Also quite possibly the best pre-workout snack ever.
