If you put it in lil ziploc baggies, seal, and stack 'em up on top of each other they store REALLY well. And the soup baggie can double as an ice pack for the rest of your lunch when you DO pack it. By lunch time it'll have thawed enough to transfer into your lil bento compartment pretty easily and you can microwave and enjoy from there. Magic! <br /><br />As for side dishes...how 'bout a simple grain salad, like a quinoa, bulgur, or a cous cous? All would go great with a black bean/corn/mexican theme... <br /><br />Or, you seem like a finger food gal - here's my personal new favorite thing... you know those small "low carb" tortillas at Trader Joe's? Suuuuuper low cal and high fiber. Anyway, I've been taking one of those, smearing it w/peanut butter (for you maybe a smear of pumpkin or apple butter instead...) and rolling up a small banana in it - it's like a sweet little banana burrito. Then I slice it into little bite size pieces..Ta da! SUPER filling, sweet side dish or dessert.
