Box Fresh Every Day

The past two weeks have been CRAZY with me.  I'm saving money like a demon (still on the Mon-Fri spending ban) plus doing a lot of other stuff.  I made sure to at least take a picture of my boxes every day.  I won't discuss each and every one, but I will say that my new favorite dessert is frozen peaches and blackberries.  Once they melt together by lunch time it's heavenly.

Please let me know if you have any questions about any of my lunches.  I'm feeling a bit uninspired in the writing department.

  1. How do you make tuna and egg salad? Sounds good and interesting. I am always looking for new lunch choices.

    1. It's pretty simple. Just mix a can of tuna fish with a chopped up boiled egg and add some mayonnaise and mustard in the mix too. Salt and pepper too. Enjoy!

  3. Is it just canned beans with salt and pepper? That sounds pretty good to me--easy enough for a sleep deprived morning!

    1. Yes, it's really just canned garbanzo beans (rinsed) with a bit of salt and pepper. I put it into the microwave for 30 seconds or a minute to make them feel more like a "meal." Try it!

  4. is there a certain calorie count that you aim for?

    1. I don't really count calories. I'm on Weight Watchers so I'm supposed to count points. But even when I'm too lazy to do that I try to have some nutritional goals with my lunches. I like to have 2/3 to 3/4 of my lunch made up of vegetables or fruit. Then I like to have at least 1 whole grain component and 1 protein component. It doesn't always work out perfectly, but if I am at least conscious of the nutritional value each part, then I feel like I've made a good effort.
