Blammo!

Another slammin' lunch today. So filling and satisfying. Take a look:
  • carrots (from the CSA, yum!) and bell peppers
  • balsamic vinaigrette dipper
  • sugar snap peas
  • curried chicken with brown rice
  • flourless chocolate cake with mixed berry compote
I think this is one of my favorite lunches of all time. Half virtuous and half sinful.

No work for me tomorrow again. So this is my final lunch for the week. Yay! I love a strong finish.

Side Show

I played a little trick on myself. I had some really unhealthy components in my lunch today, but I made them side dishes. After eating all my veggies I found the treats more satisfying. Here we go:
  • 1 cup sugar snap peas
  • 1 cup sliced bell pepper
  • 2 tbsp balsamic vinaigrette
  • 2 tbsp mixed berry compote (frozen berries cooked in a pan until it's syrupy)
  • flourless chocolate cake (baked by my Valentine)
  • curried chicken with brown rice (also made by Mr. Luvvah Luvvah)
The side dishes are leftovers from the incredible Valentine's Day dinner my honey bun made for us. I was kind of unsure about taking the curried chicken to work because I knew it would smell up the entire office. Well, I nuked it for a minute but then I put a cup of hot coffee in the microwave to neutralize the smell. It worked pretty well.

I've been hitting the ol' gymbo again this week and have been coming home more tired than hungry. That means I've been gobbling up some fruit or a Luna Bar when I get home and then falling into bed. So, this dinner leftovers are really going to last for a lot of lunches.

Love Day Lunch

It's Valentine's Day and my focus was more on tonight's dinner than on today's lunch. My beaux made a very special meal complete with cocktails and dessert so I made sure to eat light at lunch. The low cal details below:
  • turkey sandwich (3 turkey slices, 1 slice reduced fat cheddar cheese, 1 tablespoon lite mayo, spinach) on light whole wheat bread
  • bell pepper slices
  • balsamic vinaigrette salad dressing dipper
  • carrots from the CSA
  • sugar snap peas
  • Kashi TLC Fruit & Grain bar
We got our final winter CSA box this weekend. Lots of familiar goodies.

  • yellow-fleshed potatoes
  • sweet potatoes
  • an onion
  • carrots
  • beets
  • popcorn on the cob
  • a bag containing dried hot chiles
  • black turtle beans
  • a bag of mixed greens
  • a small package of dried dill
  • a butternut squash
  • a celeriac bulb
  • a bag of apples (mostly ‘Honey Crisp’)
  • half gallon of cider.
I'm excited to used most of this stuff but there are also several "offenders" here too. Beets and sweet potatoes are two of my most feared/hated foods. The color and texture are so gross. The celeriac bulb we got is huge. I'm surprisingly interested in eating it this time. We've gotten it before in the box and I just let it fester in the back of the fridge because it was so small. This one is too big to ignore so I think I'm going to try to make some sort of mashed potato-like thing. Well, stay tuned for more adventures in vegetables.

Making Do

Listen, don't judge me! Sometimes there isn't any lunch food in the house so make do with breakfast food.
Although this is one of my weirder lunches, it actually hits my nutrition targets dead on.

High fiber/whole grain [x]
maple syrup is sweet [x]
salt is salty [x]
fruit or veggie [x]
protein [x]

Well, I never claimed to be a dietitian. I'm just saying that not all lunches have to be "lunchy" to be good and more or less healthy. Anyway, today is the end of my week. I'm not going into the office tomorrow so that means no boxed lunch. Have a great weekend!

Wobbly Wobbly

Guys, I have to let you in on a secret: I'm am really out of shape! I've been trying to turn that around by hitting the gym this week. Now my legs feel like very unstable lead beams. Anyway, let me show you what I had for lunch today before I start kvetching more:
  • 1 drumstick of garlic chicken with lots of garlic and onions
  • 1 cup frozen spinach
  • 3/4 frozen brown rice
  • sugar snap peas
  • 1/2 cup garbanzo beans
My food stores are running low this week. Luckily leftovers are working so far. I've been so busy this week that lunches seem to be get the short end of the stick. I have no clue what I'm going to have tomorrow though. We're out of almost everything. Now, I'm off to hobble my way to bed.

Don't Smell My Breath

I had a very pungent lunch today.
  • 1 garlic chicken drumstick (with about 5 cloves of garlic)
  • 1 cup brown rice
  • 1/2 cup garbanzo beans
  • sugar snap peas
My personal chef created a fantastic Sunday supper yesterday and luckily there were plenty of leftovers. His garlic chicken is oh so gar-lic-kay. The recipe calls for 4 HEADS of garlic and chef always sticks to his recipes. It made for a very tasty lunch and I'm glad I paired it with such mild side dishes. We have plenty more, so I think it's going in the box again tomorrow. I hope my digestive system can take.

Freedom Friday

I'm happy to say I survived this week. Here's the lunch that helped me make it through today:
  • 1 small pear
  • turkey wrap (3 deli turkey slices, 1 tbsp light mayo, 1 cup baby spinach)
  • 1/2 cup garbanzo beans
  • peaches
Overall, my lunches have been pretty "lunchy" this week. Not a lot of dinner leftovers. I personally love leftovers so hopefully I will cook a lot this weekend and next week. Have a great weekend!

Frozen Fruit Fanatic

Another day, another lunch. It's not boring, just predictable.
  • chicken wrap (3 oz grilled chicken, onions, spinach, whole wheat tortilla)
  • 2 blood oranges
  • 1/2 cup garbanzo beans with black peppers
  • 1/2 cup frozen peaches
I also brought breakfast to work too. I've been doing this on and off for a while now, but I always forget to take a picture. I barely remembered to do it today. Unfortunately, it didn't come out so well.

I guess you can tell that I keep an arsenal of frozen fruit.
  • 1/2 frozen mixed berries
  • 1/2 steel cut oats
  • a few dashes of cinnamon
  • 1 teaspoon sugar
Both meals were pretty good and filling for the entire day. I can't wait for the weekend!

Dang It!

Ice storms and all meltdowns. That was my day today.
  • grilled chicken wrap (3 oz. chicken, spinach, grilled onions on whole wheat tortillas)
  • peaches
  • 1 blood orange
  • sliced bell peppers with salad dressing dipper
I'm exhausted. It hasn't been a very good week for me so far. Too much stress. Too much cold weather. Too much EVERYTHING. Lunch was good. But, as we all know, food can't fix real problems. I need a good night's sleep. Things always look better in the morning.
